Cacao is the main ingredient used to make chocolate. It is also one of the ingredients for mole sauce. For this reason, people often mistakenly describe mole as a “chocolate sauce”.

For centuries, indigenous populations of Mexico, such as the Mayans and Aztecs, have used cacao to make chocolate. The seeds are removed from the pods of the hard fruit. The seeds are toasted and ground into a paste. Then, sugar is added. Next, for extra flavor, cinnamon is added to the paste. Finally, the paste is formed into a ball or bar and allowed to dry.
